Jugo y sorbete de maracuyá (Passion Fruit Juice and Milk Shake)
Maracuyá* (passion fruit) is nowadays very popular around the world. Try it with milk and you will discover a whole new way to its flavor! I use it for sauces for seafood, and jellies and desserts like passion fruit cheesecake.
Ingredientes:
1 large passion fruit* (200 gm., 6 – 7 oz. yield about 1/3 cup of pulp)
3 tablespoons sugar
1 cup crushed ice
How to prepare:
Cut passion fruit in half and remove pulp with a spoon.
Place the pulp in a blender with ½ cup of water and the sugar.
Blend 10 seconds, pulsing on and off in order to keep the seeds as whole as possible.
Strain through a sieve and discard the seeds. Return the puree to the blender, add the ice, blend, and serve immediately.
Note: To prepare the Sorbete or Milk Shake, replace the water with ½ cup of milk.
