Ingredients for servings:

sliced cooked chicken

Yogurt peel of one lime pinch of salt and white pepper

Zucchini, diced, with peel

Red pepper, minced

Basil, julienne

White wine vinegar

Garlic clove, mashed

1 Teaspoon of

Lime juice

2 Teaspoons

Olive oil

1 Cup

Kale with peach dressing and 1/2 teaspoon sesame oil

  1. 5 Oz chicken breast, boned, skinned

  2. 2 Tbsp yogurt peel of one lime pinch of salt and white pepper

  3. 1 Cup small diced mango

  4. 1 Cup green tomatoes, seeded

  5. 1/2 Cup zucchini, diced, with peel

  6. 3 shallots, small diced

  7. 1/4 Cup red pepper, minced

  8. 2 Tablespoons basil, julienne

  9. 1 Tablespoon white wine vinegar

  10. 1 Garlic clove, mashed

  11. 1 Teaspoon of lime juice

  12. 2 teaspoons olive oil

  13. 1 Cup Kale with peach dressing and 1/2 teaspoon sesame oil


Instructions:

  1. Prep and cook the Chicken. Place breast in a bowl and add yogurt, lime peel, salt and pepper. Set aside for 20 minutes or more. Place the breast in a grill pan and cook covered for 3 minutes, turn and cook covered 5 minutes more. Set aside covered with foil for 5 minutes, slice and serve.

  2. Prepare the Salsa and Dressing: Mix 1/2 cup mango, tomato, zucchini, shallot (or scallions), red pepper, basil, and parsley. Place the remaining 1/2 cup mango, vinegar, garlic, lime juice and 2 tablespoon of water and 2 teaspoons of olive oil in a blender and blend until smooth.

  3. Place the cruciferous mix on the plate, place the turkey slices on the side and the mango sauce and salsa over the turkey.
