This rub is great with the tuna and also with pork ribs. The steaks can be cut in half or quarters and served in a way that you can see the fantastic deep red color of the fish.
This recipe can be made Gluten Free if you replace soy sauce for Gluten Free soy sauce.
Prepare the spice rub: place the cilantro, thyme, and coriander in a mortar and pestle or spice grinder and grind to a paste. Add the sugar, salt, and pepper.
Place the tuna steaks on a plate and cover on all sides with the spice rub. Set aside for 15 minutes.
In a saucepan, dissolve the coffee in the mandarin juice. Add the honey, soy sauce, salt, sesame oil, and pepper. Mix flour and butter into a paste and stir into the mandarin-coffee mixture. Cook over medium heat for 5 to 7 minutes or until thickened and no longer floury tasting. Add the ginger and set aside.
Place a heavy sauté pan over medium-high heat, add the oil, and cook the tuna steaks for 1 to 1 1/2 minutes on each side for rare. If desired, cut each steak in half or quarters. Transfer the steaks to serving plates.
Pour the sauce into the sauté pan to reheat. Pour around the tuna and serve.
