  1. 1 Teaspoon sweet pepper

  2. 1 Teaspoon cayenne pepper

  3. 2 Teaspoons pepper

  4. 4 Tablespoons paprika

  5. 4 Tablespoons mustard seeds

  6. 4 Tablespoons coriander seeds

  7. ½ Cup brown sugar

  8. ½ Cup thyme

  9. 20 clove garlic

Salsa BBQ para Untar a las Carnes

  1. ¾ Cup tomato sauce

  2. 3 Tablespoons mustard

  3. 2/3 Cup honey / brown sugar

  4. ¾ Cup reed wine vinegar

  5. 2 Teaspoons spice mix


Instructions:

 

BBQ Pork Ribs

  1. Prepare the spixe mix. (see below) Place spice, vinegar, Worcestershire, lemon peel over ribs. Refrigerate overnight.

  3. Remove the ribs from marinade, place them on baking pans, on single rows.

  4. Add the cooking liquid (beer or water) -enoigh to cover half of the ribs- to the baking pans.

  5. Bake at 300 for 3 hours, or until meat is tender and easily separates from the bone.

BBQ Spice Mix

  1. Toast the seeds 5 min at 350F. Mix and refrigerate. (keeps up to a year refrigerated; 1 month on cupboard)

BBQ Sauce for Meat

  1. Place all sauce ingredients in a pan. Bring to a boil, reduce the heat to medium and cook for 1-2 minutes or until darker in color.

  2. Spread sauce over the ribs. Broil bake at (500) 5 minutes per side or until golden.
