This is a great way to cook a quick and elegant meal for family or friends using calamari. Enjoy this dish any day with freshly baked bread.
Ingredientes:
- 6 tablespoons butter
- 2 tablespoons garlic paste (page XXX)
- ¼ teaspoon pepper
- 2 tablespoons Dry Sherry Wine
- 3 teaspoons minced parsley, plus more for garnish
- ¾ pound clean squid rings, fresh or frozen but not precooked
- Place butter into a small sauté pan over low heat. Add the garlic, salt and pepper and cook on low for 2 minutes.
- Add the wine and parsley; continue cooking for 2 minutes more.
- Increase the heat to medium and add the squid, sauté in the sauce for about 55 seconds—no more than one minute. They turn from glossy grayish white to completely white in color and their form changes from jelly like to harder and rounder but not tough.
- Sprinkle with more parsley if desired and serve with bread to pick up the sauce.
Note: Fresh squid should be cooked for no longer than one minute; if you forget, keep on cooking it for about 1 hour, at which point it will soften again.
