This is indeed one of the most popular rices in all of the country; you will find that almost all Colombians have it on their regular menu. Children love it because the pasta in the rice softens as it cooks and gives them something to play with as they eat! You can prepare it without the garlic if you have finicky children like mine—they prefer their rice without the aromatic flavor garlic gives it. I like it just as it is, and sometimes prepare it with chicken stock instead of water and add a tablespoon or two of minced cilantro right before serving.
Ingredientes:
- 2 tablespoons oil
- ½ cup broken angel hair pasta, in 1-inch pieces
- 1 cup rice
- 2 cloves garlic
- 1 teaspoon salt
- In a small pot over medium heat, place the oil and pasta. Sauté for 2 minutes or until the pasta turns brown.
- Add the rice, garlic, and salt and sauté 1 minute.
- Add 2 cups of water, stir, and bring to a boil over medium heat. Cook about 7 minutes, or until you see the rice very close to the surface of the water.
- Decrease the heat to low, cover, and cook for 20 minutes more.
- Serve.
