Place the cut or diced vegetable over a strain or colander.

Dunk the colander over the pot with boiling water, and make sure the heat is off and the pot is not boiling any more so you don´t get burnt.
Let the broccoli, or cauliflower sit in the boiling water for 10 seconds. (Mushrooms only sit n the water for 5 seconds).

Remove from the boiling water and set over iced water for 15 seconds more.
Drain and use, refrigerate for up to 5 days or freeze for up to 2 months if well sealed.
