Ingredients for servings:

broccoli

Head of Cauliflower

mushrooms

2-4 cups

Button Mushrooms

Boiling water

salt

1 teaspoon

ice

Ice water

  1. 1 head of Broccoli

  2. 1 head of Cauliflower

  3. 2-4 cups Button Mushrooms

  4. Metal sieve

  5. Boiling water

  6. 1 teaspoon salt

  7. Ice water


Instructions:

  1. Place the cut or diced vegetable over a strain or colander.

  2. Dunk the colander over the pot with boiling water, and make sure the heat is off and the pot is not boiling any more so you don´t get burnt.

  3. Let the broccoli, or cauliflower sit in the boiling water for 10 seconds. (Mushrooms only sit n the water for 5 seconds).

  4. Remove from the boiling water and set over iced water for 15 seconds more.

  5. Drain and use, refrigerate for up to 5 days or freeze for up to 2 months if well sealed.
