Ingredients for servings:

Crushed roasted macadamias

Rum

pesto

1 tablespoon

Home made pesto, no nuts or cheese

yogurt

1 tablespoon

Plain yogurt

  1. 5 oz Tofu

  2. 400 grams fresh sliced button mushrooms

  3. 1/2 cup steamed broccoli

  4. 1/2 cup cooked brown rice

  5. 1/2 tablespoon olive oil

  6. 1/4 teaspoon curry powder

  7. 1/4 teaspoon salt

  8. 6 crushed roasted macadamias

  9. 1 tablespoon rum

  10. 1 tablespoon home made pesto, no nuts or cheese

  11. 1 tablespoon plain yogurt


Instructions:

  1. Place olive oil, curry and salt in a pan over medium high heat. Add mushrooms and broccoli, and cook mixing every 30 secs for 2 minutes.

  2. Add the rum, mix to scrape any pan juices.

  3. Add macadamias, pesto, mix and cook 1 minute more.

  4. Add yogurt and rice, mix and serve.
