Ingredients for servings:

Flank or flap cut into 1x4” strips

1/2 Cup

1/4” Slices of cauliflower

Cherry tomatoes

Green pepper cut into 3/4 inch pieces

ginger

1 Tablespoon

Grated ginger

1 Tablespoon

1/8 Tablespoon

1- 1/2 Tablespoon

  1. 3 Oz. Flank or flap cut into 1x4” strips

  2. 1/2 Cup 1/4” slices of cauliflower

  3. 1/2 Cup cherry tomatoes

  4. 1 Green pepper cut into 3/4 inch pieces

  5. 1 Small clove garlic

  6. 1 Tsp. grated ginger

  7. 1 Tsp sesame oil

  8. 1/8 Tsp pepper

  9. 1-1/2 T cashews

  10. 2 T raisins


Instructions:

  1. Place garlic, ginger , 1 teaspoon sesame oil, in a bowl, toss the beef and the green peppers into the bowl to lightly coat them. Place each slice of beef into a medium sized skewer, skewer the peppers with the cherry tomatoes in other skewers. Set aside for 10 minutes.

  2. Prepare the sauce and set aside. Take 2 tablespoons of sauce and mix with 2 tablespoons of unsalted vegetable stock, mix and pour over the cauliflower.

  3. Place the skewered beef, and vegetables in an olive oil sprayed pan. Cook over medium heat for 2 minutes, cover, cook for 2 more minutes and turn the heat off. Keep covered. Allow to sit for 5 minutes covered.

  4. Place cauliflower and 1-1/2 tablespoons of cashews in another olive oil sprayed pan with 2 tablespoons of water. Cook covered over medium high heat for 2 minutes, turn, cover, and cook for 2 more minutes or until the cauliflower is lightly cooked. Add the cashew sauce,mix, turn the heat off. Serve.
