Place mushrooms, peppers, eggplant, onions and garlic in a baking pan. Add oregano. Sprinkle with 2 teaspoons of olive oil and some pepper. Cook in a preheated oven at 375F for 15 minutes.


Place the vegetables, chicken, olives and sun-dried tomatoes in a platter and serve.
