Roasted mushrooms 1 c halved

peppers

1/2 cup

Peppers, 1 pepper in chunks

eggplant

1/2 Cup

Eggplant, 1 med sliced

onions

1/2 Cup

Onions 1 med in thick slice

garlic

1

Clove garlic

oregano

2

Sprigs of oregano

pepper

1/4 Teaspoon

Pepper

olives

4 Black & 4 green

Olives

Sun dried tomatoes halves

  1. 4 Oz sliced cooked chicken breast

  2. 1/2 Cup roasted mushrooms 1 C halved

  3. 1/2 Cup peppers, 1 pepper in chunks

  4. 1/2 Cup eggplant, 1 med sliced

  5. 1/2 Cup onions, 1 med in thick slice

  6. 1 Clove garlic

  7. 2 Sprigs of oregano

  8. 1/4 Teaspoon pepper

  9. 4 Black & 4 green olives

  10. 2 Sun dried tomatoes halves


Instructions:

  1. Place mushrooms, peppers, eggplant, onions and garlic in a baking pan. Add oregano. Sprinkle with 2 teaspoons of olive oil and some pepper. Cook in a preheated oven at 375F for 15 minutes.

  2. Place the vegetables, chicken, olives and sun-dried tomatoes in a platter and serve.
