The cognac comes out beautifully strong in this cream. If you prefer you can reduce it to 1/2 tablespoon.

Place the cream and sugar in a clean, dry mixer bowl. Beat at high speed for 1 1/2 to 2 minutes or until soft peaks form. Add the Cognac and coffee syrup and mix to stiff peaks.
