  1. Pressure cooker

  3. 2 pounds ground beef

  4. 2 large 35 oz. cans of whole tomatoes

  5. 2 carrots, halved lengthwise

  6. 1 onion halved

  7. 1/4 cup minced red onion

  8. 5 garlic cloves

  9. 4 scallions, whole

  10. 4 sprigs of fresh oreganos

  11. ½ teaspoon salt

  12. ¼ teaspoon pepper


Instructions:

  1. Let’s add the tomatoes to the pot (if using fresh tomatoes use 36 peeled seeded roma tomatoes)then add in the beef. Mix it with the tomatoes.

  2. We’ll need to separate the vegetables from the sauce for us to this, we will be using a rack with holes and put it in the pot on top of the sauce. Now we can add the vegetables on the pot. We will be placing it on top of the rack.

  3. This will be cooked in a pressure cooker. This will take about 15-20mins.

  4. After 15 – 20 mins, open the pressure cooker, remove the vegetables and place it all into the blender. Remove the rack on the pot and before adding the juice back, use a tong to cut the tomatoes into pieces. Now mix it all up! Enjoy!
