1 teaspoon

Ground cilantro in olive oil (Salad 2)

1 tablespoon ground toasted walnuts

1 tablespoon

SALAD 1

  1. 1 cup pinto-beans, drained

  2. 1 teaspoon pesto

  3. 1 teaspoon sundried tomato paste

  4. 1 tablespoon pine nuts

  5. 1 teaspoon olive oil

SALAD 2

  1. 1 cup pinto-beans, drained

  2. 1 teaspoon ground chipotle pepper

  3. 1 teaspoon ground cilantro in olive oil

  4. 1 tablespoon ground toasted walnuts

  5. pinch black pepper


Instructions:

  1. Every time you use beans from a can or from a jar you should rinse them. Run them with water and make sure it’s clean because we are gonna eat it raw.

  2. Let’s start with the first salad which is the Mediterranean Diet Pinto Bean Salad. Start by grabbing a bowl and place the rinsed pinto bean in it. Add the pesto, sundried tomato paste, pine nuts and the olive oil then mix them all together. Then that’s it.

  3. For the second salad which is the Chipotle Spiced Pinto Bean Salad, t’s the same process. Grab a small container, place the rinsed pinto beans, ground chipotle pepper, ground cilantro in olive oil, ground toasted walnuts and black pepper.

  4. You can use your favorite kind of pepper if you want. I chose Chipotle because it’s not so hot and I like the color a lot.
