This is a great way to eat spinach and enjoy the exotic flavor combinations in a romantic dinner for two. An 11 onza can of mandarin slices in juice will do all the measurementes.
Place spinach, garlic, salt and pepper in a pot with 2 tablespoons, of water and cook covered for 3 to 4 minutes or until wilted.

Add mandarin juice, over high heat and bring to a boil. Cook for 4 minutes more or until half of the liquid has evaporated.

Blend the mixture until smooth, add cilantro ginger and suerve over salmon.
