  1. 1⁄2 pound Fresh spinach leaves, washed

  2. 2 Garlic cloves, minced

  3. 1 cup Mandarin juice

  4. 1⁄4 teaspoon Salt

  5. 1/8 teaspoon Pepper

  6. 1 tablespoon Minced pickled ginger

  7. 5 sprigs Cilantro, minced


Instructions:

  1. Place spinach, garlic, salt and pepper in a pot with 2 tablespoons, of water and cook covered for 3 to 4 minutes or until wilted.

  2. Add mandarin juice, over high heat and bring to a boil. Cook for 4 minutes more or until half of the liquid has evaporated.

  3. Blend the mixture until smooth, add cilantro ginger and suerve over salmon.
