  1. 2 cups brown rice or white, whole grain

  3. 2-4 chicken breasts with bone, skinned

  4. 1 grated yellow onion

  5. 1 grated red bell pepper

  6. 1 large tomato, sliced

  7. 2 tablespoons tomato puree

  8. 2 garlic cloves, minced or 2 teaspoons garlic paste

  9. 2 bay leaves

  10. 1 tablespoon fresh oregano leaves

  11. 3 teaspoons salt

  12. 1 teaspoon pepper

  13. ½ teaspoon turmeric

  14. ¼ cup pachi’s italian dressing

  15. 1 14.5 oz bag frozen vegetables (carrot, green bean, corn and peas) defrosted

  16. 2 tablespoons of cilantro to serve


Instructions:

  1. Ok start making Diablos con Pollo this where you’ll season the chicken. Since it is made in one pot, you’re gonna start with the water. Add 3 cups of water. we’re gonna add first all of the aromatics and vegetables. That’s one teaspoon of garlic, half a teaspoon of turmeric, teaspoon of salt, half a teaspoon of pepper, and add a couple bay leaves, some oregano.

  2. Add the onions, grated red pepper, thinly sliced tomatoes which you’re gonna dissolve and they’re only gonna be all the aromatic flavor and a little bit of the color and add tomato paste.

  5. Now add the rice. Mix it them all together and then, place the all the chicken on top of it.

  6. Ok, now that our chicken and rice mixture is done, remove the chicken from the pot and then add the vegetables that we flavored with the dressing. Mix it up and then put the cover of the pot back.

  7. Now minced the chicken. You can use scissors if you wish or you can even use your hands to do this. You’ll find that the bones fall off easily and you don’t need any expertise of removing it. After it’s done, put the chicken back to the pot and mix it with the rice.

  8. Now for this finishing touch, add some cilantro on top!.
