  1. 6 oz tilapia filet

  2. 1/2 cup onion, small diced

  3. 1/2 cup chopped tomatoes

  4. 1/2 cup grated green bell peppers or sliced sweet ají or shushito peppers

  5. 1/2 cup or 3 leaves of cabbage

  6. 1/2 cup black beans

  7. 2 teaspoon olive oil

  8. 1 garlic clove

  9. 1 lime, peel and juice

  10. 1/8 teaspoon cumin

  11. 1/4 teaspoon salt and pepper

  12. 2 tablespoons greek yogurt

  13. 2 teaspoons cilantro

  14. 1/2 cup black beans

  15. 1 tablespoon of the mixed cilantro greek yogurt

  16. 1/2 cup brown cooked rice served and seasoned

  17. 1/2 cup celery, small diced

  18. 1/2 teaspoon chili oil and/or lemon peel

  19. 1/2 teaspoon minced cilantro


Instrucciones:

  1. Place onions, pepper, tomato, black beans, olive oil, garlic, cumin, salt and pepper in a medium sized sauté pan over medium low heat and cook covered for 2 minutes. Uncover and cook for 5 minutes more, transfer to a baking pan. Place cabbage leaves over the vegetables.

  2. Rub the fish with lime peel, and half of the cilantro. Place over the cabbage in the baking pan and transfer to a 375F oven. Cook for 20 minutes.

  3. Prepare the yogurt mixture by mixing the other half of cilantro to the greek yogurt with half of the peel of one lime.

  4. Remove the pan from the oven, and sprinkle the fish with lime peel, place a tablespoon of yogurt mixture and lime slices.

  5. Add another dollop of prepared yogurt to the black beans, mix and serve on the side.
